I had SO hoped to display a finished product tonight. But instead, I'll share just the concept of my new idea for a Passover recipe. This website is inspiring.

quinoa
seaweed
avocado
carrots
sushi bamboo mat for rolling
cold water
soy sauce
wasabi
ginger
Use the quinoa (kosher for Passover, who knew?) as you would sushi rice, maybe mushing it up with some ripe avocados and adding some thin twigs of carrot for color.
